Are you in the market for a new barbecue grill? Inevitably, the first question you will run into will be whether you want gas or charcoal. It's a fiery debate, and you will find people stoutly on both sides of the argument. You may even have a firm opinion as to what you will be buying, but it is always worth taking a moment to investigate the pros and cons of both options.

For convenience, you will never be able to beat a gas grill. Simply flicking a switch turns it on, and almost immediately, you are up and running and ready to cook all your food. If you are lacking in time, this is definitely the choice for you. However, you will lose the smokey flavor that is so characteristic of charcoal grills. If you absolutely must have that charcoal-y flavor, though, there are also additions available for gas units that will help you get that flavor. That is what I would do, because charcoal grills require you to put in a lot of work; you have to acquire and prepare the briquettes, spend what is usually a long amount of time trying to light the grill, and then wait what can seem like ages for the grill to heat up enough to be able to cook thoroughly. The temperature on gas units is easily adjustable and changes quickly, so you can cook a main meat course on a high temperature, and then quickly cook it down for more delicate foods like fruit and vegetables, or even fish. Charcoal grills are widely famous for their ability to perfectly sear a steak because they can reach such high temperatures, but in my opinion, gas grills have more than caught up with that ability.

When clean up time comes, no one wants to spend a long time scrubbing and working. Charcoal grills will require much more clean up work than will a gas grill, for which you only have to turn the switch off and do a quick brush over with a metal brush. The charcoal grill will have to have time to cool off, and then you have to dispose of the ashes and scrape off the grill itself.

The majority of modern gas grills come with lava rocks or ceramic briquettes. The rocks are for collecting the heat from the gas jets, and then they distribute it more evenly underneath the cooking surface. This means you will be able to use all of the cooking space equally without having to gauge which spot will actually cook your food. If your grill comes with lava rocks, that is what you should use to cook with. That may seem pretty obvious, but there is a surprising number of instances in which people change from lava rocks to briquettes when they should really stick with what their grill came with. For instance, some grills are not designed to use lava rocks because they would reduce the efficiency of the grill's burners. If your grill didn't come with lava rocks or ceramic briquettes, don't start using them. If it didn't come with them, it doesn't need them. Lava rocks can even keep your grill from heating properly by constricting the burners. However, the transition can work the other way, from ceramic briquettes to lava rocks. Just don't try to go from lava rocks to briquettes in gas grills.

When you are using lava rocks, they should never be stacked on top of each other. They generate more heat when they are side by side, not stacked. Unstacked, they will conduct the heat much more effectively. They are designed to collect the maximum amount of heat when they are set up in a single layer across the top of the burners. This arrangement also allows them to evenly distribute the heat across the entire cooking range. To clean them, all you have to do is turn the burner up to high for a few minutes when you are done cooking.

If you use lava rocks regularly, you can lengthen their life span and effectiveness by doing a few things. You can get rid of excess drips and grease by burning them away with high heat. This keeps the rocks clean and in turns makes them last longer. You can also rotate or turn over the rocks from time to time in order to change the side that faces the burners. This will also help them to last longer. If they start to break apart, though, replace them before using the grill again.
