6 Simple Meal Sensations For Slow Cookers
Slow cookers are really one of those small kitchen appliances that we wonder what we ever did without once we start using them
. There is something about the one-pot meal that really fits the Australian culture and it is derived from so many cultures who have excelled at one dish cooking.
Silverside/Corned Beef with Honey Mustard Sauce Recipe
Silverside, also known as Corned Beef, is a firm Aussie favorite. Many people remember this dish served by their mothers and grandmothers on Sundays instead of a roast but no less delicious.
Depending on your size of slow cooker bowl, choose your piece of meat.
Place it in your cooker with:
1 cup vinegar
cup sugar
1 large onion cut in quarters
1-2 bay leaves
2-3 whole cloves
Only just cover the meat with water and cook in the slow cooker on low for 6-8 hours.
Sauce
Reserve I cup of strained cooking liquid from the meat and add:
1 teaspoon mustard (any type, powdered or readymade)
1 tablespoon Honey
cup vinegar
2 teaspoons of cornflour
Combine cooking juice, vinegar, mustard and honey into a small saucepan and bring to boil. Whisk in cornflour bended with 1 teaspoon of water and mix until the sauce thickens. You may need to add a little more if you need a thicker sauce. Taste it and see if you need any more mustard.
Serve over sliced silverside with root and green vegetables.
Garlic Pork Roast
This is an easy recipe that taste fabulous. Choose a lean pork roast or trim the fat off yourself. Boneless is easy to carve. Again the size of the pork will be determined by the size of your cooker. Adjust cooking time for smaller meat.
1 .5 kilo pork boneless loin roast
1 tablespoon vegetable oil
1 teaspoon salt
1/2 teaspoon pepper
3 cups peeled sweet potato pieces
1 medium onion, sliced
6 cloves garlic, peeled
1 cup chicken stock
Brown your piece of pork on all sides in hot oil after seasoning with salt and pepper. Add sweet potato, garlic, and onion to bottom of slow cooker. Add meat on top. Deglaze the browning pan with a little stock and pour this over the meat with the rest of the stock. Cover and cook on low for 8-10 hours. Serve sweet potato with pork along with your choice of other vegetables.
Mango Chicken
A delicious tropical flavoured dish.
1kg skinless, boneless chicken pieces
Olive oil for browning chicken
1 onion cut in a fine dice
1 teaspoon minced fresh ginger
1 cup mango nectar
1 cup fresh mango flesh (this can be omitted and an extra cup of nectar added)
cup brown sugar packed firmly
Brown off the chicken and add it to slow cooker with pan juices and all other ingredients. Cook on low for 4-5 hours. Serve on rice or cous cous if desired.
Lemon Buttermilk Self Saucing Sponge Pudding
You can even dessert in your
slow cooker!
Pudding batter
1 cup plain flour
cup sugar
2 tsp baking powder
2 tsp grated lemon peel
1/8 tsp salt
cup buttermilk
2 tbsp cooking oil
Sauce
1 cups hot water
cup lemon juice
cup sugar
Combine all pudding batter ingredients in a bowl and mix well with wooden spoon or electric mixer. Pour into the slow cooker bowl.
Sauce
Stir hot water, lemon juice and sugar together in a separate bowl.
Pour carefully over batter trying to get water down the sided of the slow cooker bowl.
Place 5 paper towel layers between top of slow cooker and lid.
Cook on HIGH for about 2 hours.
Serve with cream and/or icecream
Vegetable and Chick Pea Curry
You can use any combination of your favourite vegetables for this. Cut them in chunks and large florets. For onion be sure to soften in a pan before adding the curry powder/paste and cumin and cook off for about a minute.
Also you can use powdered curry, curry paste, or combine your own mix in a blender. The curry flavor is up to you. Also add:
Juice from lemon
800g can diced tomatoes
2 cloves garlic crushed
Bring all ingredients to boil on stovetop for about 3 minutes until sauce thickens a little and then place in slow cooker for on high for 4 hours or low for 6 hours. Serve with rice
