It's a sad state in the US today, 33% of adults and 19.6% of children are obese

. (1,2) It seems that no matter how we try Americans can't seem to lose weight and keep it off. Some people claim that obesity is a social problem, a psychological response to increased societal stress, or a learned / genetic predisposal. While all these factors contribute to some degree to the obesity epidemic there is one factor that sabotages American's best efforts at living leaner and healthier lifestyles and that is simply put , malnutrition.

Few people would look at a morbidly obese to just an over weight person and assume that they are malnourished. We have ingrained images of what malnutrition looks like ; rail thin legs and arms, bloated bellies, sunken faces etc.. The fact is that an American living in the 21st century is more malnourished than an American of the same socio-economic status in the 1950's, 60's or 70's. There were far fewer morbidly obese persons living in the United States in the last century and toward the end of the last century, even with the advances of medical science, we are moving toward a decreasing life expectancy for the next generation; for the first time in our collective human history.

To understand Obesity and Health you have to look at all factors which contribute to them . We will in this paper briefly outline the causative factors and solutions to the Diet conspiracy that is keeping Americans fat and unhealthy.

What makes us hungry ?

Maybe you are one of the millions of Americans who are overweight because you are always hungry. Hunger, is still a poorly understood biological process in humans. Some theorize it is a drop in insulin, body temperature or glucose in the body that triggers hunger pangs. It has been demonstrated in the literature that people all have unique satiety points. The stomach is volume mechanism and body size is a genetic predisposition . Above all else hunger, eating and satiety is controlled mainly in the brain. While all these factors contribute to our levels of hunger, in the United States today, the biggest cause of why so many people are hungry is simply our diet.

Even those people who eat well have to eat more than they did 30 years ago. For example, if you wanted to get the same nutritional benefit of a 1975 banana , you would have to eat 3 2010 bananas. While on a conscious level you do not notice the nutritional deficiency , your brain does. In order to maintain nutritional homeostasis your brain sends out the signal that you are still hungry. Eventually your stomach's volume mechanism sends out the message that it can't hold any more volume and you stop eating. Once some of your meal is digested and removed from the stomach the signal of "fullness" ceases to be sent to the brain and the brain resumes its' quest for nutrition.

Am I Malnourished ?

The short and fast answer to this question is that you are probably malnourished in at least one essential vitamin or mineral. 70% of American children are Vitamin D deficient (3) for example and a lack of vitamin D affects our immunity, bone growth , blood pressure and leads to a slew of other diseases. The best way to determine which major nutrients you are lacking is with a simple blood test. However, micro nutrients are not covered in these standard medical tests and it's these nutrients which also contribute to our increased hunger and malnutrition.

Why are we malnourished ?

What we eat and don't eat contributes to our collective malnourishment. Many people eat a great portion of "fast food" , "processed food" and nutrient poor all natural food. Most people realize that eating a burger and fries for lunch every day is going to make them fat based on caloric intake alone. What those people who eat too much of the good stuff' don't realize is that they have to eat 5-40% more to satiate their brain and maintain nutritional homeostasis. Going back to the banana example if one banana has a caloric value of 105 , and you have to eat 2 MORE bananas to satiate your brain that equals 210 additional calories you have to consume.

Our food is nutrient poor because of over production. Instead of ripening on the vine our food ripens artificially in a warehouse. The food never is given the chance to absorb all the nutrients it used to from the soil. Our soil itself is nutrient poor as well, so even that organic food you are eating still contains less nutrients than it did 30, 40 or 50 years ago.

Why a "viscious" cycle?

Imagine a little baby , 8 lbs. The body size and caloric intake changes as that baby grows to meet its demands. As that baby becomes an average size adult a set point is reached and the body does everything it can to maintain that set point. Now imagine a lack of nutrition is prompting the brain to prompt the body to eat more and that baby is now an adult 20 or 30 lbs over weight. The set point has to be reset so the brain can maintain homeostasis for that new body size. As the body size goes up, so does the set point. Unfortunately the quality of the food doesn't increase in proportion to the calories, so more food is required and extra calories tag along adding to our body fat and upping our nutritional needs.

So what can we do to break the fat cycle ?

Let's assume that you are one of the many who does not have a genetic , disease or mental issue contributing to your weight, let's say your food is making you fat.
