A company that keeps such a regular business schedule is not very likely to be open on a holiday, as this is not likely an expense that is going to net them much extra business. These types of courier companies specialize in transporting goods which are essential to the health care system. Many times, these shipments can have people's lives hanging in the balance, and as a result they tend to operate every day of the year, even on holidays.

These are the companies that exist to serve international businesses and the kinds of businesses which never shut down. For example, there are many different types of manufacturing firms which maintain a round the clock schedule because they are trying to force maximum profit out of their plants. 24/7 couriers can make pickups to keep a steady supply out of those plants in order to allow them to ship promptly to their customers around the world. These couriers are also open on all holidays, allowing for no slowdowns in the shipping process.
So, it is safe to say that most courier companies do not make pickups of shipments on holidays. Like all other companies they have to pay people a great deal extra to get them to work on a holiday, and as such most do not offer their services on holidays as a cost saving measure. However, there are some courier companies out there that do make holiday pickups. If you absolutely need to have a package picked up on a holiday you should be able to find a courier company that can complete that service for you.
