1. Local Irish Sourcing
We source all of our premium quality meat from the best producers across Ireland. Our Award-Winning Dry-Aged beef comes directly from the foodie heaven that is West Cork; Our West of Ireland lamb is born and reared on the countryside adjacent to the wild Atlantic sea-board from Connemara to Achill Bay to Donegal. Our gourmet pork is sourced from a select group of farmers in the sunny South East of Waterford.
2. Traditional Butchery
Our meat is specially-selected and expertly hand-prepared and trimmed by our master butchers using the very best traditional techniques. The standard of our butchery and meat presentation is exceptional.
3. Traditional Maturation Methods
We use traditional maturation methods to mature our beef and lamb for 21 days. As a result the meat is incredibly tender with a well-developed rounded and rich flavour.

Our West Cork beef is an award-winning, dry-aged premium beef product, selected from only the best artisan producers on the basis of high marbling and eating quality. Our Lamb
Our West of Ireland lamb gathers its fantastic taste from the rugged landscapes where it is reared. The lamb is typically 14-20 weeks of age, grazed outdoors on a grass-based diet giving it a unique muscle texture and eating quality. Seasoned by the elements, these sheep live on a rich diet of grass and herbs which give it a distinctive flavour. Choose from our selection of gourmet lamb steaks, traditional roasting joints or slow-cook lamb cuts.
Our Pork
Our pork is sourced from a select group of producers in South-East Ireland; in fact our pigs are born and reared on "Fenor Farms" in Waterford. Choose from a selection of tasty favourites including pork fillet, pork loin chops, loin roast or the retro classic pork belly.
