. Cold soups are delicious, very easy to prepare, and even easier to enjoy. Two of the best cold soups you can enjoy during the hot summer season are Tarator soup and Tomato soup.

Tarator is a cold cucumber soup. It hails from Bulgaria but is also a regular dish in many other countries in the Middle East. This soup is very nutritious, very simple to put in order, and very delicious too.

To prepare a tarator soup, you will need 2 large cucumbers, half a kilogram of plain yoghurt, 2 cloves of garlic, a half bunch of very fresh dill, a tablespoon of sugar, some salt to flavor the soup to your taste, and some water. You can also add in a few tablespoons of nuts if you so choose. Once you have these ingredients ready, completing the soup is fairly easy. Simply grate the cucumbers after you have washed and peeled them then put them in a pot. Next, chop the cloves of garlic and add them to the pot together with the grated cucumbers. Take the bunch of fresh dill that you have and cut them into small pieces then add them to the pot as well. Add the vinegar then add the right amount of salt for your taste. Mix all of the ingredients well in the pot. Once you have mixed all of the ingredients, add the yoghurt into the mix. You can add some water if your think the mixture is too thick. Put the whole mixture into the fridge to cool for at least half an hour. After that, your tarator is ready to be served and enjoyed.

The tomato soup on the other hand can be an alternative cold soup that you can enjoy in the summer heat. The ingredients are: 6 large tomatoes, 1 big red pepper, 2 cloves of garlic, a half bunch of celery, a half liter of tomato juice, 2 tablespoons of lemon juice, a teaspoon of black pepper, kilogram of feta cheese, 150 grams of olives, some salt and sugar, some parsley, and some basil.Cold Light And Natural Cream Soups For Hot Summer Season


To prepare the cold tomato soup, simply chop all of the vegetables into small pieces then mix them all together in a blender. After the vegetables have been blended well enough, add the other spices that you prepared, including the lemon juice, the tomato juice and the salt, into the mixture then stir all the ingredients well. You can add some sugar too if you want your soup to be a little sweet. Put this mixture into the fridge and let it cool for an hour. You can let it stay in the fridge for a little longer if you want your soup to be really cold. Once it has cooled down enough to suit your liking, you can already serve the soup. To make it even more refreshing, you can serve the soup with toppings of grated cheese, olives, and basil.
