Know Your Favorite Cheeses
You don't need to take a trip to Italy and attend a cooking school for four years. Just... Do a little online research on the cheeses you really enjoyed at the sampling event. Sure, cheese is great when you can just enjoy it with some wine, but it's even better when you can enjoy it on a Philly cheese steak. Buy what you like and don't think that you can't cook with it just because it's fancier than most cooking cheeses. It's tricky to use a cheddar and almond loaf to make a salami sandwich, but the better the cheese, the better the food, so experiment a little and use some of your favorite cheese on some of your favorite meals.
