What are carbohydrates?
A carbohydrate is an organic compound composed of carbon, hydrogen and oxygen (like water). The abbreviation is CHO -- carbon, hydrogen and oxygen. Therefore it is called a carbo-hydrate.
Carbohydrates in the food you eat are either complex carbohydrate starch, such as cereals, bread and pasta -- or simple carbohydrates, such as the sugar in sodas, candy, jams and desserts, etc.
Whether a carb is simple or complexe depends on the degree of complexity of the carbohydrate molecule. Glucose, a simple sugar, is the most important carbohydrate metabolized by nearly all known organisms, including your body. Carbs are converted into the glucose your body needs by your liver.
What does glucose do for your body?
Your body body metabolizes glucose and oxygen to provide the energy your cells need. Carbon dioxide, water and heat are produced as byproducts of metabolism. Oxidation of 1 gram of carbohydrate yields approximately 4 kcal of energy -- hence we say 1 gram = 4 Calories (capital C means 1000). Glucose that is not needed right away is stored as glycogen in the liver, muscle and fat tissue. When your body has insufficient glucose it re-converts the stored glycogen back to the glucose it needs.
Avoid bad carbs
Refined carbs -- such as those found in processed foods, e.g., white bread, white pasta, crackers -- contain very little fiber and micronutrients such as vitamins and minerals. Refined carbs are digested quickly and their simple sugars rapidly get into your blooldstream causing your blood sugar to spike.
Try to avoid foods made from high-calorie refined grains -- such as cake or cookies.
If you like to bake and your recipe calls for flour, consider 50% whole grain flour, 50% enriched flour.
Sodas and sweetened drinks contain simple sugars. Avoid them as much as possible. Drink unsweeted or diet beverages. Or better yet, drink water.
Eat good carbs
Most of the carbs in your diet should be the complex carbohydrates in fruits, vegetables and whole grains. They contain fiber which digests more slowly than sugars and refined carbs. They improved digestion and bowel waste density. They satisy your appetite over a longer period of time, helping you to avoid hunger pangs and overeating. Unrefined whole grains include the germ and the bran with good fiber, not just the flour inside the seed shell.
