When go on a diet that simply employs starving yourself, your body will start to function ineffectively and will start to hold on to any food that it can get stores it as fat. This is because they body thinks it is starving it starts to go into conserving-mode / survival-mode.

That is why when you go on an extreme diet and start eating again, you'll easily go back to square one and end up with the weight you originally had and the horror is that you might even be heavier than you were before you went on the diet.
