Baked Noodles and Cottage Cheese Casserole


Ingredients

1 cup low fat Cottage Cheese

4 packet whole wheat noodles

1/4 cup 1% low fat milk

tbsp butter, low fat melted

2 Tbsp chives, chopped or basil

1/2 tsp garlic, minced

Salt and pepper, to taste

1 1/2 Tbsp whole wheat bread crumbs

Sweet Paprika, for topping

Method

Cook the noodles al dente (means just cook) and cool to room temperature. Place the cooked noodles into a bowl and toss with 1/2 cup of cottage cheese, milk, melted butter, chives or basil and garlic. Season this mixture with salt & pepper to taste. Spray an 8 x 8 inch baking dish with nonstick cooking spray lightly on the bottom and sides. Place the noodle mixture into this dish and top with the remaining cottage cheese spreading this evenly from end to end. Top this evenly with breadcrumbs and top this with paprika for color. Spray this lightly with some nonstick spray.

Place this into a 400F oven for 10 to 15 minutes.

Suggestion: Serve separately in a casserole or as an accompaniment.

Bruschetta of Cottage Cheese

Ingredients

Whole wheat bread, 8 slices

cup tomato, seeded and diced

1 Tbsp garlic, chopped

1 Tbsp olive oil

1 Tbsp basil, chopped fine

Salt and pepper, to taste

cup Cottage Cheese

Method

Lightly toast slices of bread in a oven or in a salamander for 4-5 minutes or until golden brown. Lightly toss remaining ingredients in a mixing bowl and season with salt and pepper. Top each piece of toast with about 1 tablespoon of the tomato mixture, and serve it. (Bread cut into desired shape and toast it)

Suggestion: Makes a great appetizer when served with a tossed salad and finished with cracked black pepper.

Soy chocolate cookies

Ingredients

2-cup soy flour

1-cup whole-wheat flour

1 cup zero sugar

2 tbsp low fat butter

tsp baking soda/1/4 tsp baking powder

2-egg whites/salt 2 pinch

2-3 tbsp low fat milk

2 tbsp cocoa powder

cup chocolate chips

2 tsp vanilla essence

Method

Preheat oven at 375f. In a large mixing bowl sieve both flours with salt, baking soda and powder. Add cocoa powder, sugar and butter to flour and rub with hands until crumbly, add egg whites, vanilla, chocolate chips and mix well. Now pour milk and knead to smooth dough, cover with wet cloth and keep it aside for 10-15 minutes in a refrigerator. Cut into desired shapes (roundels, squares and triangles) and bake for 20-25 minutes.

Sweet and salted barley cookies

Ingredients

1-cup barley flour

cup whole-wheat flour

1 tbsp low cal butter

1 egg white

tsp salt & ajwain each

tsp baking powder

2 tsp zero

tsp vanilla essence

Cold water as required kneading dough

Method

Sieve both flours with salt and baking powder. Add butter and rub with hands until it tends to crumbly. Now add zero, ajwain, vanilla and egg whites and mix well. Add water and knead to smooth dough, keep it aside covering with wet cloth for half an hour. Cut into desired shapes and bake in a preheated oven at 200C for 20-25 minutes.
