Mediterranean Diet Recipe - Daube De Cuisse De Canard

Daubes, or long-cooked stews, are well-known all through Province and the region of Great. Beef and lamb are generally utilized, but so are game and domestic fowl. Components needed:

20 duck legs

Further-virgin olive oil

Butter

2 carrots, diced

a couple of onions, chopped

4 shallots, chopped

forty one stalks celery, diced

one tablespoon flour

1 (750-milliliter) bottle dry red wine

two to 3 sprigs fresh thyme

two to 3 sprigs clean rosemary

two bay leaves

a couple of sprigs clean thyme

half-dozen juniper berries

Sodium

Recently ground pepper

one tablespoon glace de viande, non-compulsory

Method:

o Cut duck legs in 50 percent lengthwise. Place loads of oil and butter in big large-bottomed pot and cook dinner little by little in batches, turning regularly till lightly browned on all sides.

o Return all cooked duck items to pot. Include carrots, onions, shallots and celery. Boost heat and cook 5 mins, stirring frequently.

o Turn all elements out of pan into colander. Let drain 5 to ten minutes. Spot ingredients in significant terracotta or glass baking dish that can be coated. Sprinkle flour more than elements and stir until eventually it disappears. Include wine, thyme, rosemary, bay leaves and juniper berries. Season to taste with sodium and pepper. Cover tightly and bake at 325 degrees, devoid of lifting lid, two hours.
