Think about a microphone, even lapel mics, and a simple public address system will mean your guests can be part of your ceremony.
Don't forget the dining. If you are offering food outdoors, even nibbles, make sure the caterer has experience in serving in such a setting. Make sure the food on offer is appropriate for outdoor dining. The setting may well determine the menu.
