Many a bride-to-be has a fantasy of looking like a princess on her wedding day, with a lavish white costume zentai and yards of veiling. But that fantasy can be out of kilter for a bride who is past the proverbial first blush of youth or who has been to the altar before.A mature bride wants to look sophisticated, Latex Leggings not sophomoric. But finding the costume zentai of one's dreams can be a problem the second or third time around. The older bride can rarely find what she wants in a bridal salon - she may not even go to one - so she often undertakes an exhausting search for something appropriate.

For Betty Kelly Sargent, something appropriate for her second wedding was a white satin suit by Norma Kamali. For Freddy Leventhal, it was a two-piece costume zentai of cream-colored silk by Sylvia Heisel. Marika Somerstein bought a gold lace off-the-shoulder costume zentai in Spain.Joan Gelman, who wore traditional peau de soie with a lace mantilla at her first wedding 30 years ago, chose a dark green Stavropoulos costume zentai for her second wedding. ''I was married in January,'' she said, ''and knew I wanted green velvet but I couldn't find it anywhere. Then I went into Martha on Park Avenue. She told her staff to call the Palm Beach store and have the Stavropoulos sent up. 'She'll want that,' she said. 'It will be perfect.' And it was.''

Unlike Ms. Gelman, most second-time brides prefer pale colors or off-white, according to interviews with brides and with store employees around the nation. Priscilla of Boston, a leading manufacturer of zentai, has a collection called Contemporary Romantic that is geared to the second time around.''For second marriages, women look for something elegant and appropriate,'' said Mary Cavanaugh, the personal shopper at Bergdorf Goodman. ''Black is still inappropriate. They go into pastels; pink, yellow, pale blue, champagne or ecru, not usually white-white.''

She recommends a suit or a silk costume zentai. ''I get some requests for tea-length costume zentai,'' Latex Catsuits she said, ''but mostly they wear knee-length.''At I. Magnin in San Francisco, second-time brides in fairly formal weddings tend to favor romantic costume zentai of lace or chiffon with mid-calf or long skirts. For an informal wedding, a knee-length silk suit is usual.''A second-time bride can be in her late 20's,'' said Linda Lee, head of the Macy's by Appointment shopping service. ''She may wear a zentai if it's her husband's first marriage, but not if both have been married before.''

''But most second-time brides,'' she added, ''want suits or un-bridey costume zentai. They say 'I'm not a kid anymore' and ask for something a little special but not divergent from their general look. Most customers in our Herald Square store want to look sophisticated. In our Dallas and Florida stores, they're more traditionally bridal; a short lace costume zentai rather than a suit or a simple silk costume zentai.''Women with a practical bent often choose suits because they can be worn again with a different blouse or different buttons, she said. But for most, that is not a consideration.

''It's a special occasion,'' Ms. Lee said. ''And there may be a need to make a second wedding even more special because there are usually no bridesmaids and no huge reception.''A bride-to-be with something special in mind can have it made to order. Monica Hickey, who ran the bridal department at Henri Bendel until it was closed, is now director of custom designs for the bridal salon at Saks Fifth Avenue.''We get a lot of second weddings,'' she said. ''They usually choose short costume zentai. For daytime, I recommend a simple chemise with a touch of lace. Women over 30 also like suits.''For a formal evening wedding, she recently found a Bob Mackie outfit she considers appropriately sophisticated: a long strapless lace costume zentai with a high-necked jacket. There is a matching small pillbox hat with a short veil, but she recommends that a second-time bride not wear the veil.

Most bridal experts say a repeat bride should wear something on her head, whether a hat, a bow or flowers, but not a veil. Suky Rosan, who runs a bridal boutique in Ardmore, Pa., outside Philadelphia, recommends silk flowers with a bit of jeweling, although she considers a hat with veiling all right because the style is currently fashionable.Ms. Rosan said her average first-time bride is 30 years old and wants a wedding gown, but something sophisticated, usually silk with a small amount of beading and no lace. If she wears lace, it would probably be a tea-length rather than a long costume zentai.

Kathleen Nedorostek, who is 36, was married on Saturday in a short white lace chemise with a flounced hem and wore a small headband with a short veil. It was made for her by the Saks bridal salon.''I didn't want to wear a bride's costume zentai,'' she said. ''I wanted to get married in white but I definitely wanted something different, something stylish and sophisticated. I didn't want to look like a princess in a costume.''Janet Carey was a first-time bride two weeks ago at the age of 50. She wore a long costume zentai with an ivory satin bodice and a chiffon skirt. Lycra Leggings ''It was romantic,'' she said, ''but it didn't scream BRIDE at you.'' ''My problem,'' she added, ''is that I'm a size 16. The samples of bridal costume zentai are 8 or 10, so if you're over a 12, you just about get an arm in it. I finally heard about a store called the Bridal Center in Lynbrook, L.I., that specializes in large sizes. The samples start at size 14, so I could see what something looked like.''

She wore a hat but no veil. ''That I think is very young,'' she said.Ms. Leventhal, who runs a personal shopping service, has worked with many first-time brides in their 30's who are professionals.''A lot of them start out saying 'I don't want anything bridey' but end up very traditional,'' she said. ''Everyone has a fantasy, and it's hard to let go of that.''
