Asian weddings are about celebration, colours of the rainbow, lots of music, loud and happy voices, exhibiting cultures, festival moods, social gatherings, lots of drinks, and above all, loads of varieties of tasty Asian food.

An Asian Wedding would not be a wedding without the bride and groom, just as a menu would not be a menu without Biryani. At most, if not all weddings, you would be unlikely to find a groom without a bride, just as you would be unlikely to find Biryani without Gajar Hallwa.

Biryani is a must in the selection of any menu, since guests always expect biryani, and would be upset if it were not there. Biryani is a dish of long grain basmati rice, cooked in the pot along with meat products, and served with dahee yogurt, raita, onion salad and yogurt drinks made of lassi. Biryani is the most popular dish in the Asian wedding world.

Biryani has come a along way, and goes a long way back. It used to be a rich dish. It was the dish of Moughal Badshah the King, then it was for the Maharaja, then Nawab. Biryani can be made of fish, chicken, prawns, or even fresh vegetables.

At many Asian weddings where the menu is simple, one can understand the simplicity of the Biryani, gajar, halwa, Dahee (Yogurt drink) papad and raitia. If they have varieties of dishes, then you may see biryani as the very last item to be served (curtain dropper).

The making of biryana has many different methods. In many parts of the world, such as in India, the way Biryani is made in restaurants is different to the way it is made at home. Making Biryani in weddings or in large volumes for an event is different. If the biryani has been made badly, then it is not a real biryani. Biryani can only be made by an expert cook, and the biryani is the only dish that can really decide if the cook is an expert.

Biryani is the most expensive, yet the most popular dish. But why is it always served last? After any event biryani is likely to be left over the most. All I can say is that Biryani tastes better the next day than any other dish. So if you are attending an Asian event do yourself a favour - take some biryani home and enjoy it the next afternoon.

The basic ingredients used in boryani are: lamb, meat, chicken, prawns or vegetables, garlic, ginger, chilli, salt, haldi (turmeric) garam masala, ground coriander, ground cumin, plain natural yogurt, vinegar, smallish tomatoes, potato, onion, zafaran, white mushrooms, a pinch of cumin seeds, bay leaves, basmati rice, water, oil, butter and ghee.
