Moong dal cheela

Ingredients

1-cup moog dal whole

1 tsp ginger fine chopped

2 green clillies chopped

1 onion fine chop

2-3 tbsp spinach leaves fine shredded or chopped

1 tsp lemon juice

Asafeotida a pinch

Olive oil for grilling

Salt/pepper to taste

Method

Soak moong dal over night and blend in a mixer with green chillies and ginger to smooth paste. Add 1 cup water, mix well to make a smooth thin batter. Now add all the remaining ingredients and mix well. Heat non-stick pan with oil, pour 1 tbsp batter and grill till golden brown on both sides. Serve hot, with green (coriander/mint)chutney.

Besan ka cheela

Ingredients

2-cup besan

1 onion fine chop

1 capsicum fine chop

1 or 2 green chilli fine chop

tsp ajwain/1 tsp black pepper

tsp red chilli Pd.

1 tsp chat masala/1tsp coriander Pd.

Salt to taste

2 tbsp coriander leaves

1 or 1-1/2 cup water

Olive oil for grilling

Method

In a large mixing bowl mix together all ingredients except water. Add small quantity of water for making smooth batter so that there should be no lumps. Make batter like dosa mixture. Heat oil in a non-stick, pour 1 tbsp batter on it and cook till golden brown on both sides. Serve with chutney.

Nutritious Upma

Ingredients

cup wheat bran

2-cup soy flakes

1 onion finely chopped

1 tomato finely chopped

1 stalk curry leaves

2 green chillies finely chopped

1 tbsp. coriander leaves finely chopped

1 lemon juice extracted and strained

tsp. each mustard & cumin seeds

tsp. turmeric powder

Salt to taste / 1 tbsp. oil

Method

Roast both wheat bran and soy flakes, in a heavy pan, for two minutes. Allow cooling; cook roasted bran and flakes together in 2 cups water for 6-8 minutes. Remove and allow to cool, keep aside. Heat oil in a pan, add seeds, and curry leaves, Chillies, allow to splutter. Add onions, tomatoes, stir-fry for two minutes. Add flakes and bran mixture. Add turmeric, salt, lemon juice, and coriander. Cover and cook on low heat, till fluffy, and excess moisture evaporates. Serve hot with a cold iced tea or as a hot snack by itself.
