Delicious Barbequed Chicken Breast with Ham & Cracker-Crumb Coating

This delicious barbeque dish combines the lean boneless, skinless chicken breast with a crusty coating of ground up minced ham and cracker crumbs. The barbeque sauce is the base for the cracker crumb coating. The lemon juice gives a little tartness and also may act to tenderize the chicken. If you have the time you might experiment with the barbeque sauce by using it as a marinade. To try this, coat the chicken with sauce and put it in a covered bowl in the refrigerator for 1/2 hour or so before using it to make the cracker coating. If you do this and then use the leftover marinade, be sure you heat it to boiling to avoid bacteria from the raw chicken .

Ingredients

1/2 cup minced ham, ground up infood processor

2 small skinless, boneless chicken breast halves

1/2 cup barbeque sauce (Commercial or make your own with recipe below)

1 cup cracker crumbs

1/4 cup grated parmesan cheese

Salt and pepper to taste

Instructions:

1 - Pound chicken breasts slightly to even thickness.

2 - Blend the ground up minced ham with the barbeque sauce.

3 - Mix the cracker crumbs with cheese and salt and pepper.

4 - Dip chicken breasts into the barbeque sauce mixture, then the cracker crumb mixture.

5 - Place on a greased baking pan into an oven preheated to 500 degrees.

6 - cook for 10 minutes or until chicken is cooked through.

Tangy Barbeque Sauce

Ingredients:

1/2 cup ketchup

2 tbsp lemon juice

1 small onion minced very fine

1 tablespoon olive oil (or butter if you prefer)

1/2 tbsp Worcestershire Sauce

1/2 tsp salt

1/4 tsp paprika

1/8 tsp cayenne pepper

Instructions:

1 - Combine all the ingredients in a small saucepan

2 - Bring to a boil, then simmer for 15 minutes
