How to Use a gelato machine this Summer

When planning that summertime barbecue for family and friends, remember to add home ice cream makers to the menu. But, if you've forgotten how to use that old fashioned ice cream maker that is stored in the garage, don't worry. The process is fairly standard for both the manual crank and traditional electric ice cream maker.Unpack the ice cream maker and make sure it has all its parts. There should be an outer tub, a metal canister and lid for the ice cream that fits inside the tub, a paddle that fits in the canister, and a lid that fits on top of the ice cream maker. If it is a commercial ice maker the lid will be a motor to turn the paddle, and a manual ice cream maker will have a crank.

Find a recipe for homemade ice cream. Look in your cookbooks or go online, and find a recipe to use. Typically they will be a combination of milk, cream, sugar, eggs, flavoring and fruit, all cooked up on the stove before freezing. Fresh strawberry or peach ice cream is a special summertime treat.Wash the canister and its lid, and insert the paddle. The top of the paddle should extend over the rim of the canister, which will be turned during the freezing process.Pour the ice cream mixture into the canister, and fit the lid on top of the canister. When making your recipe note the size of the canister as the ice cream will expand during the freezing, so you don't want to overfill.Set the canister into the center of the tub of the ice cream maker .

Fit the motor/lid onto the top of the drum and canister. It will normally fit into hinge like groves along the outer rim of the tub, and the top of the paddle will fit into the center of the bottom of the motor/lid. A manual crank may fit together a bit differently.Add crushed ice and rock salt between the inner wall of the tub and the outer wall of the canister. Spread a layer of ice, followed by a liberal layer of rock salt, and repeat. The salt is needed to freeze the ice cream.Plug in and turn on or start manually cranking the gelato machines . Continually add more salt and ice. When the paddle will no longer turn, the ice cream should be frozen.Unplug the ice cream maker, remove the motorized lid and lift the canister from the tub. Wipe down the sides and top of the canister to remove any salt. You don't want salt to get into your ice cream.
